[messaging] Rough list of secure email/chat solutions

I've been working on a list of projects (current and past) in this space,
here's a very rough accounting:

This list is incomplete/buggy and some of the columns aren't that well
defined, it's mostly just notes for an academic survey I'm planning to
write this year. I'd appreciate any pointers on projects I've not included
though!
